Missing Sync for Symbian ships
Mac developers Mark/Space have released Missing Sync for Symbian, providing (among other things) automatic Bluetooth syncing of data between phone and Mac. Here's the TUAW write-up. More on this next week when I'll be starting a new series of features looking at S60-Mac connectivity and compatibility.

Mac and Nokia compatibility

Your work is already done for you. I have been syncing my E61, E90, N81, N82, N95, with my Mac for quite a while now. In fact SE's statement that they will not support Mac OS X (Subsequent turn around), forced me to drop them completely and look at Nokia again. You can get plugins from Novamedia ( www.novamedia.de) for a price or go to the listed Nokia site above. If you need SE plugins, they now offer them but before this, you had to go to: http://www.feisar.com/. Jools was doing all the plugins before SE saw that Apple is a name to be deal with. In short, there is no need to pay for anything as the phone providers pretty much cover all bases. Nokia and SE that is.

Forgot to add
There is another app called BluePhone Elite that is pretty darn good at managing SMS's. The same type of app can also be had at NovaMedia.de.

Any users of E71 successfully using it on the Mac ; I was using the beta versions but erratic sync issues; sometimes syncs well , sometimes unsuccessful . The website doesn't offer a trial version . I also use Missing Sync ( Mac version) with my htc TytnII - works very well

Not inpressed with missingsync
I tried it, but not impressed, I think I keep using my previous setup.
This is how I sync my mac and my nokias:
isync for adress/calendar ($0)
Nokia multimedia transfer ($0)
Automatic for music <-> itunes, photos/films <-> iphoto
Manual for documents
Syncs automatic on connection for usb-cable, for bt-sync I just hit a button to trigger it, normally I wouldnt want to sync music on bt - it would take forever
BluephoneElite (costs $)
primarilly sms/calls
This is truly a great app for integrating phone and mac
Pauses itunes/vlc during calls, displays and announces incomming calls and sms
Allows me to initiate calls and sms from the mac - If i get a mail with a phonenumber, or find a phonenumber on a webpage, I just cut-paste to make the call/sms.
Also it has a proximity functionality I have set it up to trigger an isync run whenever I get in range
When I walk away music pauses and screensaver activates.
