Is it possible to edit my contacts and calendar on my PC once I've backed my from my Nokia 7650?

Yes, you can. After that, you need to use Syncronize (Nokia PC suite) to update both PC and 7650.

I've looked through the files and couldn't see contacts or calendar when I browsed through it all quickly.

for me, i'm sync it with microsoft outlook, from there you may do the editing and sync it with your 7650
