Neither the Series 60 version, nor the Symbian OS version changes during the phone's lifetime; even if you get new firmware upgrades, Series 60 and Symbian versions will not change.

Regarding Nokia phones:

7650: Series 60 0.9, Symbian OS 6.1
3650, 3600, 3620, 3660, N-Gage, N-Gage QD: Series 60 1.2, Symbian OS 6.1
6600: Series 60 2.0, Symbian OS 7.0s
6620, 7610: Series 60 2.1, Symbian OS 7.0s
