DON'T delete the messages on the P800. Once you check for mails on your computer it will receive the message. The next time you check for mail on your P800 the message will be deleted from the P800 (at least from the inbox)

Thanks for the advice people. I think the best option is to leave the email on the phone until I get to download to my PC, less faffing around that way. Not an ideal email setup, though. :(

My guess is that SE did it on purpuse, to avoid people filling up the memory and rendering the phone useless.....

Sorry, Ghostdog, I missed your question!
What I meant :
If you use your p800 to download email from your mail server, you'll see your email on your phone. However, when you download your email to your pc, it takes it off the mail server. So, next time you 'sync' the p800 with the mail server, it also wipes it off your phone.
I would like the phone to keep my old email and if you know how to do that, please let me know...
