6682 - free RAM and apps quitting...

So, I'm a bit of a newbie to the Symbian thing. I've been a mobile (J2ME/BREW) developer for a while but never really dealt with Symbian beyond its running of J2ME apps. I'm looking to replace my current setup (SE Z520a + Palm TX) with one of the phones I have (Nokia 6682) and while I'm happy with it, I have a few questions...

I often see RAM being listed as 8mb shared, is this both ram used for running apps (system heap) AND storage (flash)? Or is that 8mb of flash ram, in which case how much heap does the phone have?

Also, while the multitasking of the S60 phone is nice over the palm, the Nokia has a bit of a problem in if I switch to another app, there's a good chance the other apps I was running will get shut down automatically (presumably due to lack of heap). So I can be running the email client, see a url, open a web browser to view the URL, try to go back to the email client, but it's been quit on me...

Lastly, I'm looking at moving up in the future to a newer S60 device (I have to say, there's something about it I just like over Palm and definitely over Win Mobile) - presumably newer devices (looking at E62, or importing the E61 for UMTS on Cingular here in the Bay Area) have more ram (and therefore won't quit background apps as often), is this true?

The heap size is unlimited - well... limited by the RAM size - at all Nokia's Symbians. RAM is used only for apps running and they can be stored on phone's internal memory or on a memory card.
