I've just noticed the email I send from my E61 goes into the sent-items on the phone and not the sent-items on the server so my home computers have no record of my sent mail.
Have I slipped up somewhere?

You haven't slipped up and I agree this is a pretty glaring omission.
I even tried to set it all up to work manually. For example, I subscribed to my Drafts, Send and Trash folders with my IMAP account, but you can't TRANSFER messages in between them which is even MORE glaring!
I figured that after I sent a message, I could copy the message to my server's Sent messages manually... nope. I even hoped to be able to Move messages to me Trash folder rather than just deleting them.... nope.
Anyway, it's not all that bad, as I at least came up with a good workaround for my Sent Messages, which to me was the most important of the three.
Firstly, I activated the "Send copy to self" option in the E61's prefs. The next thing I did was to setup a rule in my desktop email program, which basically trapped for messages where the "Sender" was me and the "Reply-To" was me. I tried trapping for the "X-Mailer" header, but it didn't work too smoothly. This worked great, but it had the unfortunate side effect that every time I sent a message from the E61, I'd get annoyed by having the same message appear in my inbox. I had to of course leave it there until the next time I checked with my desktop mail, so it would properly get stored in my Sent folder.
THEN, I setup the perfect option, but this won't be available to many people. I run my own mail server, and have something installed on it called Sieve, which is like SERVER SIDE rules! I setup the rule server-side... I actually setup ALL of my mail filtering rules server-side, and now my Sent get stored in my sent effortlessly, although they are always marked as unread ;-)
Hopefully that will at least give you some ideas.
