How much would the 7710 cost approximately?

I'd estimate around £400-£550 sim free on release, around the price of a P910i or 9500/9300..then there are the addons to go with it :o

First indication from Germany is 536 Euro.

What I've heard from a Dutch dealer is that it will sell for 630-680 euros, which strikes to me a bit odd, because didn't Nokia say the 7710 would cost about 500 euros?

The page http://www.nokia.com/nokia/0,,65385,00.html says "Planned in the 1st quarter of 2005" (in the lower left corner of the big picture - after a while of waiting).

Yes they did. But I doubt they'll make it. Anyway, Nokia still has 3 weeks to release it Q4 2004 so it's not impossible...
